Recipe for the Week – Bunny Mac

Ok, don’t get freaked out by the name of this recipe, it has nothing to do with bunnies or rabbits. But it does have something to do with carrots :-). This is a kid-friendly, veggie, cheesy meal that is preschooler-certified.

What you’ll need:

½ cup dry macaroni
½ tbsp plain flour
1 tsp butter
½ cheese cube grated
½ cup milk
1 medium carrot grated
½ tsp oregano
Salt and pepper to taste

What you’re going to do:

  1. Cook the pasta according to pack instructions and drain. Rinse once in cold water and drain again.
  2. Heat a pan and melt the butter.
  3. Add the flour and fry for a few seconds till it starts turning brown.
  4. Add the milk and whisk well on low heat.
  5. Add the grated cheese and carrot and let it cook for about 5-7 minutes, whisking several times in between.

  1. Add salt, oregano and pepper.
  2. When the mixture is thick enough, add the drained pasta and mix well.
  3. Serve immediately.

This is really easy, no baking required, all pantry staples, but not a very good idea for weight watchers, unless you control the portion size.

Kids are sure to love the cheesiness of this dish and won’t even recognize the carrots in it!! You can actually try other vegetables, I think cauliflower would be great as well, but I liked the color provided by Mr. Bunny’s fav food!!
