Recipe for the Week - Easy Fudge

This is a recipe I discovered when I was a kid. My brother and I made it together and we’ve been fans ever since. It’s a good recipe to try out with your kids as it is really easy and doesn’t need much cooking.

What you’ll need (to make 25 fudge squares):

  1. 8 tbsp unsalted butter
  2. 4 tbsp cocoa
  3. 3 tbsp honey
  4. 200 gm plain biscuits (I used Sunfeast Lite biscuits)
  5. 1 tbsp sugar
  
What you’re going to do :

  1. Place the biscuits in a clean plastic bag and crush them with a rolling pin. (This is where the kids can help)
 
  1. Do this till they resemble fine crumbs and put them in a bowl.
 

  1. Put the butter, cocoa, honey and sugar in a saucepan and stir gently on low heat till the butter melts.
 
  1. Stir a little more till the sugar dissolves completely.
  2. Turn off the heat and pour this mixture over the biscuit crumbs.
 
  1. Stir it well so that the whole thing is evenly mixed. If too dry, add some honey.
 
  1. Put this mixture into a dish and press down with the back of a spoon to level it out. (The kids can help here too)
 
  1. Chill for 2-3 hours till firm. Cut into squares and serve.

These are especially great for a kiddie party, but beware of the crumbs!! I plan to try another version of this by substituting half the butter for condensed milk and using multigrain biscuits instead of regular ones. Let’s see how that turns out!
